Denny's Restaurants, with 1700+ units throughout the 50 States, conducted a performancernevaluation of the gas griddles they currently use. With recent advancements in gas griddlerncooking surface technology, there was particular interest on the client's behalf that a polishedrnstainless steel cooking surface could reduce labor costs associated with daily surface cleaning.rnAnd if that were the case, costs associated with related cleaning supplies as well. Our objectivernwas to provide proof that gas technology advancements with new substrate cooking surfacesrnwould produce the anticipated labor cost reductions and add value to the use of natural gas asrntheir cooking fuel of choice. As a result, we invited them to our Technology Center in Charlotte,rnNC and offered our expertise to assist them in conducting a comprehensive evaluation of theirrncurrent griddle equipment standards. A significant finding was that the superior recovery of gasrngriddles that incorporate a "polished stainless steel" cooking surface, not only produced a greatrnfinished product but reduces food waste, due to less surface tension and more importantly,rnreduces the associated labor costs with the daily cleaning process. This finding reflects an annualrnsavings of over $1600 annually per store in cleaning labor alone, with the results published inrnCooking for Profit magazine, March 2004.
