Microbial biodiversity in a situation of geographical isolation in Linosa island

We report the study of microbial population of oenological interest in experimental vineyard planted on Linosa island (Mediterranean sea) in 2008, in a situation of geographical isolation which limits the possibility of contamination by industrial yeasts. The first aim is to study how yeast populations appear in the vineyards so producing a description of biodiversity; the second aim is to understand whether the Saccharomyces are found, on the grapes or in the wines, through their research in spontaneous micro-fermentations of sterile-crushed grapes (in the lab) and in spontaneous fermentation (on the island); the third aim is to create a yeast collection to study the possible oenological application.
