Inulin is a natural carbohydrate compound and a polymer of fructose units with great potential benefits. Inulin is an enzyme that can cut fructose units from inulin to fructooligosaccharides (FOS). And it is also widely used in the food, beverage and pharmaceutical industries. Inulinases can also be produced in thermophilic bacteria. Therefore, this study aims to remove microorganisms from geothermal habitats, namely hot springs that produce thermostable inulinase enzymes. Based on the screening results of 20 identified isolates, 8 isolates showed inulinase enzyme activity obtained by the formation of clear zones. The activity was shown by the UTMTR RIG S10 isolate at an incubation time of 8 hours, an OD value of 0.747, and an inulinase level of 3.6486 units / mL. Furthermore, amplification and sequencing of the 16SrRNA gene showed that the isolate was a strain of Bacillus licheniformis. More research is needed to purify this enzyme for industrial applications.
