Nowadays many exotic fruits are available at best quality in any nearby grocery store at any time. The transport paths related to those goods are often very long and time consuming. The task in optimised fruit logistic processes is to get the fruits from the farm to their destination without losses caused by expired shelf life. Therefore the ambient conditions in a fruit container must be hold in an optimal state using quality monitoring technologies. Especially bananas are a very good example for perishable goods in transit to show the difficulties of a long transportation. Those fruits are of climacteric nature which means that they have an oxygen related cell respiration. During such ripeness processes heat, carbon dioxide and ethylene gas are produced. The emitted ethylene is a plant hormone which induces or accelerates ripening (fig 1).
