The following study deals with the design and development of an experimental set-up for the research of a new method for extracting whole or light-half walnut kernels. Therefore, the methodological approach of the set-up construction is explained step by step. The analysis of the nuts' anatomy and the definition of boundary conditions, due to the ideal set-up for experiments to figure out the ideal cutting position and parameters, is our top priority. Innovative potential to increase extracting performance lies in the cutting concept to separate the nutshells in a further process.
