Cordyceps militaris was cultivated under the same conditions in rice and millet substrates, respectively. After harvest, adenosine, cordycepin and D-mannitol were quantified by high performance liquid chromatography (HPLC) because these three bioactive ingredients were commonly used as targets to equate with medicinal properties. From the analysis, the levels of cordycepin and D-mannitol in both rice and millet substrates were found to be highest in the sclerotium in comparison with other parts of the fruiting body, while the level of adenosine was highest in the tip of the fruiting body. It was also important to note that adenosine, cordycepin and Dmannitol levels were higher when cultivated in millet. This finding made millet as the substrate of choice to bring the indoor cultivated Cordyceps to a higher and more consistent level of quality. However, fruiting bodies cultivated from the rice substrate produced the best aroma. Based on the findings, manufacturers can now design their Cordyceps products in accordance to client's health product requirements.
