摘要

Both eugenol and isoeugenol form reactive products upon electrochemical oxidation. Eugenol is dealkylated and forms further oxidation products originating from the dealkylation product. The dealkylation product is oxidized to the corresponding o-quinone, which is able to act as a Michael acceptor. Isoeugenol is additionally converted into two reactive quinone methide species (alkylated and dealkylated product). Protein modification was successfully simulated using an EC/LC/MS approach. Outlook: Elucidation of modification site by tryptic digest, modification of human serum albumin.
