摘要

Proposed methodology based on single step extraction method followed by GC-MS analysis provided the sensitivity and resolution sufficient for metabolite profiling of methanolic extracts derived from meat samples. Applied manual data extraction method based on programmed peak area calculations for specific ions and time intervals was easy, quick and repeatable and enabled direct transfer of the obtained peak areas to the SIMCA program for further multivariate analysis. Three-class PLS-DA model enabled acceptable separation of all classes of products, both for chicken and pork meat samples and proper prediction of new raw samples as well as commercial meat material.
