There is a strong tendency to define quality as a set of physically measurable benchmarks. While this may represent "quality" in its most tangible form it may be useful to think of quality as a broader conceptual framework that reconciles customer expectations to supplier performance. As primary producers we serve multiple customers and the needs of each may not be the same. Quality as defined by the processor may or may not represent the same expectations held by the retail or food service customeror by the ultimate consumer. For example, quality as defined by the processor tends to focus on impacts to operational efficiency and cost while the consumer's definition includes attributes like value, convenience, taste and consistency. It is possiblethat the tension created by these differing definitions is not wholly reconcilable. However, growing consumer interest in where food comes from and how it is produced provides our industry with an opportunity to more fully understand and meet the expectations of the entire supply chain.
