In order to elucidate the molecular-level change of gelatins with treatment by the high-pressure slurry pump method (the jet impact treatment), the gelling characteristics of the jet-treated gelatins were examined with temperature scanning dynamic rheometry and polarimetry. The repeatedly jet-treated gelatins exhibited α-dominant molecular weight distribution in GPC, suggesting that cleavage of microgel and higher molecular weight components gives components having the molecular weight around the weight of the α-component. Correspondingly, the gels showed a lower setting point and a larger elasticity. However, slight change in helix formation ability was observed with polarimetry. By the differential gel permeation chromatographic analysis, the generated components do not show the identical retention time with the α-component. In conclusion, the generated components by the jet treatment feature cross-linking ability in the gel network and contribute to bloom, but are not identical with the native α-component.
