Interaction of proteins with water plays an important role in their functions. In solutions, functions of proteins are much Different from those in pure water because of the coexistence of solutes. Figure 1 shows various events of proteins in aqueous environment involving changes in the state of hydration, which cause protein unfolding, suburtt dissociation, dissociation of enzyme-substrate complex etc. These phenomena are thermodynamically analyzed in explicit consideration of the effect of water potential.
