Treated by high pressure, starch can gelatinize in the presence of water. On the other hand, starch can form starch-amphiphile complex when gelatinized by heating. In this study, we have treated potato starch in the presence of SDS (sodium dodecyl sulfate), an amphiphilic compound, by high pressure. X-ray diffraction and thermal analysis indicated the formation of starch-SDS complex under high pressure.
