Pressurized hot water, also known as subcritical water, is being researched as an alternative extraction medium in the development of new analytical procedures that utilize solvents that are less costly and less toxic than conventional organic solvents. Water is also a convenient solvent with respect to the sample matrix as the sample does not have to be dried prior to a subcritical water extraction.
