In North America, the consumer preference for niche type produce and meat products appears to be growing. This can include locally raised, products containing limited additives, and meat raised humanely and/or without antibiotics. Unlike past attemptsto develop these products when niche foods were a passing fad, the trend appears to be taking a more permanent hold and gaining strength. Customers are now demanding transparency in both how animals are raised and what they are fed. Some of the more popular niche offerings go beyond antibiotic free: they can include no medications of any kind (except vaccines), no animal products and no animal by-products.
