A continuous enzymolysis device is combined with a single-filter housing dynamic sepa rator (used as ultrafiltration module) and a complete stirred enzymolysis reactor. The technological process of producing fructose was studied by using inulinase from Candida glaebosa to hydrolyze the inulin which is the main ingredient of Jerusalem artichokes extract. It shows that the continuous enzymolysis will be an operation having the most developing future.
