Confocal Raman microscopy (CRM) was applied to characterize the chemical profile of milk fat globules (MFGs) in recombined emulsion systems. Raman spectra of six different pure volatile organic compounds (VOCs) had been scanned under CRM. The interactions between VOCs (trans-2-hexenal) and individual MFGs in oil-water emulsion systems were successfully observed. Stronger intensities of characteristic Raman spectra of trans-2-hexenal were found on the MFGs than the milk fat globule membrane (MFGM) region in a recombined emulsion system after reaching system equilibrium, which reveals that the MFG as a whole, rather than MFGM, plays an important role in VOC absorption processes.
