Enzymes are used in the food and baking industry as processing aids. More recently, the feed industry adopted enzyme use to increase digestibility and efficiency of plant matters. In the case of dry enzyme products, these industries traditionally used spray dried enzyme powders. Such products were dusty and had limited flowability. Low attrition resistance and dustiness are not desirable, since enzymes, as every natural polymer, can cause allergies in susceptible individuals.
