Intramolecular and intermolecular interactions are probably responsible for the complex range of properties found in polysaccharides. However, despite their wide fields of applications and intensive commercial exploitation - e.g. as flow enhancers, stabilizers, and agents for binding, suspending and thickening - there are still many unresolved questions concerning the relationships between solution structure, properties and effect (in relation to viscous and elastic properties, and in the presence of salts).
