In recent years, it has been given greater importance to the fish quality characteristics like safety, nutrition, texture, flavor, and color. There are other factors influencing this attributes, dietary factors such as high and low levels of protein in fish food and factors of intensification of fish culture such as stocking density. These factors have to be in fish farmer mind to produce fish with good quality characteristics and increasing fish production. Herein, we describe the main fish quality characteristics. Furthermore, we will describe some of the factors influencing fish protein performance and fish growth such as dietary protein levels and stocking density. Mainly we will focus on tilapia fish culture, which is the second most important fish farming in aquaculture.
