The transglycosylation of stevioside (St) with hydrolyrtic cornstarch catalyzed by a newα-cyclodextrin glucanotransferase (CGTase) from Paneibacillus macerans JFB05-01 wasinvestigated. The effects of reaction parameters including temperature, molar ratio of the reactants,substrate concentration, enzyme loading and pH on the reaction were studied. Catalyzed by 10UCGTase /g St in 3 h, the highest conversion of stevioside of 54.5% was obtained.
