@@ Introduction Selenium (Se) is an essential element for human. Its deficiency can lead to some critical human health problems, such as the Keshan disease. Diet is the major source of Se intake for the general population. But in China, there is a Se deficiency zone that stretches from northeast to southwest crossing 22 Provinces (Tan, 1989).
