摘要

Crystal growth in any pan boiling operation is difficult to study. In technical literature, slow crystal growth is referred in various problems however the technical method for measurement of crystal growth in sugar solution i.e. in various massecuite is not available. An attempt has been made to develop a method for quantification of crystal growth in sugar solution i.e. massecuite by assuming various conditions of massecuites. The article elaborates the crystal growth rate in g/m~2 mean surface area/hour boiling time for all the three massecuites.
