The Food Safety & Standards Act, 2006 has been published in the Gazette of India Extraordinary, Part-II Section 1 dated 24th August, 2006 as Act No. 34 of 2006. In order to create public awareness, year 2008-09 has been declared as Food Safety and Quality year. Furthermore, Food Safety & Standards Authority of India (FSSAI) has come into existence. This paper describes the principles and procedures of HACCP. If sugar mills intend to produce a good quality food grade sugar, then the plant would have to implement a HACCP system as well as GMPs.
