Current techniques for measuring oxygen in small-pack products are destructive. Here is described a novel non-invasive optical procedure suitable for measuring the oxygen concentration in products packaged in glass or PET. The technique allows the simultaneous quantification of oxygen concentration in both the liquid phase and gas headspace. Since the procedure is non-invasive it is possible to monitor oxygen concentration in individual packages throughout filling, further processing and storage. The method has been used in a study designed to determine the effect of oxygen on the staling of flavoured alcoholic beverages.
