摘要

Wheat and wheat products have much more importance as a main source of energy and nutrients of diets of people in many cultures especially for the Turkish people. The daily consumption of wheat is about 200 g per year per person in the Western Europe and North America. On the other hand, studies in 1974 and in 1984 show that about 450 g and 400 g of wheat and wheat products are consumed daily by average Turkish people. Since bread is one of the cheapest foods in Turkey, much of wheat is consumed as bread. The difference between rural and urban consumption of wheat in Turkey is about 50 g per day per capita.
