A study was conducted to investigate the anti-nutritional factors such as oligosaccharides, dietary fiber, glucosinolates and phytate in the meal samples of 3 Chinese double-low rapeseed varieties and their corresponding defatted seed samples. Dietary fiber comprises carbohydrates and protein, minerals and lignin and polyphenals. The results showed that the oligosaccharide contents in 4 meal samples were 2.0%―2.5%, and there were no significant differences among the 4 varieties. Overheating treatment made the protein content considerably increased in dietary fiber, while the non-starch polysaccharides contents changed rarely. The types and content of glucosinolats vary significantly among 4 varieties, 4-OH-3-indoly-methyl glucosinolate decreased considerably after the overheating treatment in the processing. However, the myrosinase activity exited while Chinese C meal processed under 105°C, which means the processing temperature was lower than needed. Otherwise, there were some 2.5%―3.0% of phytic acid , which indicated that phytate phosphorous was around 0.8% and 75%―80% of total phosphorous in the meal.
