The combined enthalpy-water content-diagram for moist air and moist drying products was set up exemplary for wheat and applied to modelling deep-bed drying. The calculable relatonship between the measured time course of temperature in the drying zone, the effective driving forces of mass transfer and the changing moisture content of grain led to a new thin-layer equation for wheat. A mathematical model was developed and validated with a good agreement between experimental and simulation results including changing inlet air conditions. A similar procedure may be applied to analyse, design and also to control continuous-flow drying.
