We succeeded in producing soya protein products (SPCs and SPIs) from soya flour deoiled with aqueous isopropanol solutions. By combining dry milling of dehulled soya beans with a subsequent wet milling of the soya flour particles the high oil yield and low residual oil content in the deoiled residue, vital for the production of the desired protein products, could be achieved. The soya protein products derived from this deoiled residue showed a similar composition and had similar functional, nutritional and sensory properties as the conventional soya protein concentrates and isolates and may therefore find an equal application and market.
