Monitoring of temperature-mediated adipose tissue phase transitions were studied in vitro using an Abbe refractometer. The 1-2-mm thick porcine fat tissues slices were used in the experiments. The observed change in the tissue was associated with several phase transitions of lipid components of the adipose tissue. It was found that overall heating of a sample from the room to physiological temperature led to decay of refractive index of the tissue. Besides, we observed abrupt changes in the refractive index in the temperature range from 37 to 60 ℃, which were associated with phase transitions of tissue lipids.
