The white particles hwich freuqently occur in the surface of Chinese sufu were investigated. Mocroscopic examination of the particles showed that they were crystalline. Physical separation of the particles from different sufu products followed by chemical characterization. HPLC identification adn recrystallization confirmed that they were mainly consisted of 73
