The effect of high hydrostatic pressure on the activity of blood serum transferases AST, ALT and the GGT has been investigated. Enzyme activity was determined immediately after pressure treatment at 150 and 500 MPa and after storage of pressurized samples for 7 days at T = -20℃. It has been revealed that the transferase activity in the blood serum decreases after high hydrostatic pressure treatment in comparison to the initial state. The degree of enzyme inactivation is determined by the pressure value and substrate. It was found that the storage of pressurized samples at 500 MPa can result in the increase of enzyme activity.
