The estimation of freezing times using various analytical and empirical methods have been implemented withrnlimited success in the food processing industry. A critical process issue that needs to be considered is that of systemrncontrol. Simulation models have indicated that a control policy where the conveyor speed is monitored and variedrnaccording to the current thermal load in the tunnel can provide significant energy savings. The primary objective ofrnthis paper is to provide a stochastic model for the tunnel freezing process with an adaptive control strategy.
