Current situation of grains in China:China became the world's largest producer of grains.There are lots of categories such as sorghum,millet,panicum,buckwheat,oats,barley,triticale,special corn,Job's-tears seed,mung beans,red beans,kidney beans,broad beans,soy,sesame,perilla,flaxseed,potatoes,etc.China's annual consumption of grains is more than 5 million tons.Grains have lots of categories and their processing characteristics are different.Grains food processing has complex process requirements,which resulted in less than 10％ in processing and conversion of the total grains.The majority of grains are consumed as a direct consumption patterns.%我国杂粮现状:中国是世界上最大的杂粮生产国,杂粮品类多,主要是指高粱、小米、糜子、荞麦、燕麦、大麦、黑小麦、特用玉米、薏米、绿豆、红小豆、芸豆、蚕豆、大豆、芝麻、紫苏、亚麻籽、薯类等.我国每年消费的杂粮在500万吨以上,杂粮种类繁多,原料加工特性迥异,杂粮食品加工对工艺要求复杂,导致加工转化用杂粮不到总量的10％,绝大多数杂粮作为直接消费形态而消耗了.
