The present invention relates to a method for producing konjac and a konjac food prepared thereby, and more particularly, using ionized water produced by electrolysis of water as an immersion water for konjac powder, and using carbonated water or acidic ionized water for molding konjac. It relates to a method for producing konjac capable of removing the peculiar smell of konjac by neutralizing it, and to a konjac food produced thereby. The method for producing konjac according to the present invention comprises the steps of (a) immersing konjac powder in ionized water produced by electrolysis of water and swelling to prepare a konjac paste; (b) preparing a mixture by adding calcium hydroxide as a coagulant to the konjac paste prepared in step (a); and (c) heating the mixture prepared in step (b) to a predetermined temperature to shape it into a food form.
