To provide a crab shell extract capable of efficiently improving a flavor and taste of crab by adding the same to a food product, and canned crab which is excellent in a flavor and taste of crab.SOLUTION: There is provided a crab shell extract which is liquid and in which, a relative conversion density of 2-methyl butanal is 0.1 μg/L or greater, a relative conversion density of 3-methyl butanal is 0.1 μg/L or greater or a relative conversion density of hexanal is 0.01 μg/L or greater. There is also provided canned crab containing the liquid crab shell extract and crab meat, and satisfying following (1) and (2): (1) a relative conversion density of 2-methyl butanal in a solid content is 0.1 μg/L or greater, a relative conversion density of 3-methyl butanal is 0.1 μg/L or greater or a relative conversion density of hexanal is 6 μg/L or greater; (2) a relative conversion density of 2-methyl butanal in a liquid content is 0.1 μg/L or greater, a relative conversion density of 3-methyl butanal is 0.1 μg/L or greater or a relative conversion density of hexanal is 0.03 μg/L or greater.SELECTED DRAWING: None
