Providing a novel crystalline starch decomposer whose solubility is different by temperature.In this technique, a crystalline starch decomposed product is provided, wherein the content of glucose polymerization (DP) 8 to 19 is 40% or more, the content of glucose polymerization (DP) 20 or more is 55% or less, and the crystallization ratio by the X-ray diffraction method is 1% or more.The crystal starch decomposed product according to the present invention can be suitably applied to food composition, food and drink, medicine, cosmetic, industrial products, feed, medium, fertilizer, etc., because there is no need for cold water to be soluble in hot water.
