Disclosed is a fish oil microcapsule having proanthocyanidin as the wall material, consisting of the following ingredients by weight: 5-10% wall material and 90-95% fish oil; the wall material is bayberry leaf proanthocyanidin, the bayberry leaf proanthocyanidin being prepared from bayberry leaves. Also disclosed is a method for preparing capsules from the described fish oil. The fish oil microcapsules prepared using the method of the present invention have stable quality and good storage performance, and can be broadly added to various foods.
