PROBLEM TO BE SOLVED: To provide a plastic oil and fat composition for milling good in workability, mouth melting and flavor release and foods to which the plastic oil and fat composition is added.;SOLUTION: A plastic oil and fat composition for milling contains lauric transesterification oil and fat having iodine value of 31 to 42 and lauric extreme hardened oil having iodine value of 0.1 to 4.0 and melting point of 25°C to 37°C. The iodine value of the lauric transesterification oil and fat is preferably 31 to 37. Mass of lauric acid binding at 2-position of triglyceride contained in the plastic oil and fat composition is preferably 11 mass% to 24 mass% based on mass of whole aliphatic acid binding at 2-position of triglyceride contained in the plastic oil and fat composition.;SELECTED DRAWING: None;COPYRIGHT: (C)2018,JPO&INPIT
