Brewing; aÙrating liquids.-In a method of cooling and aerating wort, access of air is prevented during the first stage of the process, and the froth formed is dissipated so as to release the enveloped steam. Fig. 1 shows the general arrangement of apparatus in one process. The vacuum pan 1 is connected by the pipe 3 with the condenser 2 and air pump 4. If the condenser is of the jet type, the cooling-water from the tank 7 is freed from air by passing it in sprays through the vessel 10, which is exhausted by the pump 9. Fig. 3 shows one of the various ways in which the froth is retained in the vacuum pan 1. Screens 14, on the endless rotating band 19, pass in front of the outlet 16 and press back the froth which is combed off by the projections 18. Cooled wort, passing through the perforated bottom 23 of the chamber 22, cleans the screens and breaks up the froth on which it falls. In other arrangements, the screens may be replaced by revolving beaters, or the breaking of the froth may be effected by spraying means only, or an adjacent froth-collecting vessel may be used in which similar means are employed to dissipate the froth. Various combinations of the above froth-dissipating devices can be used. Fig. 10 shows an arrangement in which the wort is partially cooled in the pan 71, provided with a condenser 72 and pump 74 as before, and is further cooled in the pan 1. For aÙrating and further cooling the wort, it passes by the pipe 57 and flows over the surface of a refrigerator 58 in a chamber 59 into which air is passed through a filter 60 to remove germs &c. Pipes 63, 75 connect the refrigerator and condensers so that the water passes from the refrigerator to the condensers 2, 72 in succession. A supplementary condenser is described in which the condensation is completed by means of liquid other than the somewhat warm liquid previously used in the refrigerator. The wort may be completely cooled, if desired, without contact with air, by passing it through a closed vessel in which cold liquid is circulated. The aÙration of the wort may take place at a later stage in place of combining it with the cooling process as above.
