Yeast.-Distillers' yeast is prepared from the pith of palm trees such as Metroxylon, Caryota, Copernicia, &c., from the roots of Manihot utilissima, and like plants, and from sago, tapioca, arrowroot, &c. and the by-products and residues obtained in their manufacture. The materials are mashed with malt and the wort separated by a filter-press, centrifugal separator, or otherwise, The wort is mixed with malt culms, bran, &c. to provide nitrogenous food for the yeast, and is filtered and fermented.
