Tea preparations.-The excess of tannin or of caffeine in tea is neutralized by the addition, in the first case, of caffeine or a salt thereof, and, in the second case, of tannin or a compound thereof. A solution of the substance is sprayed into the air currents used for drying, or on to the tea during fermenting or rolling.
