Malting apparatus comprises one or more Saladin boxes 1 provided with two manifolds 3, 5 furnished with nozzles 4, 6 directed into the space below the floor 2 for the supply of warm humid or atmospheric air and hot air respectively. As shown, air is circulated by fans 9, 12 through an air conditioning and washing device 8 or heater 11 respectively and subsequently exhausted through a trunk 14 and optionally recirculated through valves 16, 17. During germination, the valve 13 is shut and humid air circulated at a low fan speed. After germination, drying is effected by opening valve 13 and circulating hot air while increasing the humid air flow. Thermostats may be used to control the temperature and humidity of the air entering the manifolds and servo motors operating deflectors or dampers to ensure that equal quantities of air are ejected from all the outlets in any one manifold. The hot air supply from a single heater may be directed to several Saladin boxes in rotation.
