Production of a food which may be transported and stored under tropical conditions involves drying raw fish, e.g. cod, haddock, material to reduce the water content sufficiently, e.g. to less than 18%, to permit grinding, compressing the ground material to blocks, and providing the blocks with insect-proof and moisture-proof outer wrappings. The raw fish may, before drying, be washed with potassium sorbate, benzoic acid or sodium benzoate solution and be irradiated with ultra-violet light. Drying may be in a cabinet or tunnel at 50 DEG C., followed by heating with infra-red lamps. The outer wrapping may be aluminium foil, cellulose acetate film or rubber hydrochloride film. The blocks may be packaged in paper treated with a 10 parts piperonyl butoxide - 1 part pyrethrin mixture and the blocks may be dipped in a low methoxyl pectin-calcium chloride dispersion to provide pectinate coatings. The ground, dried fish material may be mixed with skimmed milk powder. The product from finely ground fish material, especially the product containing milk solids, may be used for preparing rissoles, soups and stews, and, with flour, for preparing pancakes and bread.
