Sucrose monoesters and diesters of fatty acids (6-30 C atoms) are separated by dissolving a mixture thereof in an aliphatic alcohol (1-6 C) at between 40 DEG and 80 DEG C., cooling to 0 DEG to 35 DEG C. separating the precipitate of diesters of saturated acids (at least 16 C), evaporating the alcoholic solution to dryness, dissolving the residue in ethyl acetate by the aid of heat, cooling the solution 5 DEG to - 20 DEG C., separating the precipitate of monoesters, evaporating the solution to dryness and recovering therefrom the residue of sucrose diesters of saturated fatty acids (up to 15 C) and diesters of sucrose with unsaturated fatty acids. The sucrose mono-and diester mixture is obtained by the reaction of sucrose with fatty acid esters, e.g. glyceroltriesters such as ox tallow, palm oil, or stearates, and examples describe the separation of these mixtures.
