A process for obtaining guar gum from guar seeds comprises the steps of: shucking off and removing their spermoderms, i.e. outer shells, soaking the remaining endosperms in water, squeezing the soaked endosperms, e.g. between rollers, to eject the embryos, and drying and screening the resulting material to yield an endosperm fraction constituting guar gum, and a protein-rich embryo fraction constituting food for animals.
