A process for estimating hop bitter substances in beer comprises passing it through a water-insoluble solvent for the substances in such manner that beer drops are formed which move at a velocity less than that at which an emulsion is formed but sufficient to cause turbulence inside the drops so that more than 60% of the substances pass from them into the solvent, continuously supplying and removing the latter and estimating the percentage of said substances in the solvent removed. An apparatus (Fig. 2, not shown) for effecting the process comprises a chamber 21 containing a rapidly rotating plate 23, an inlet pipe 22 for beer directed towards the centre of the plate, the chamber having a separate inlet 29 for the solvent, an upper outlet for the solution 30 and a lower outlet 31 for the spent beer. Also described (Fig. 1, not shown) is an apparatus in which beer is fed down a vertical pipe 4 and through a jet head containing a number of small jets into a chamber 3 through which solvent flows upwardly.
