Cis/trans isomerization of conjugated, unsaturated fatty acids and their esters is effected by heating with sodium or potassium bisulphate. Suitable fatty acids are those derived from dehydrated castor oil, isomerized safflower or tall oil, or a linseed fatty acid or a mixture of acids containing eleostearic acid. Examples describe the isomerization of a commercial dehydrated castor oil fatty acid containing about 90% linoleic acid.
