A process for crystallizing alpha form L- glutamic acid crystals comprises mixing an L- glutamic acid inorganic acid salt solution or an L-glutamic acid alkali salt solution with crude crystals of an L-glutamic acid alkali salt or an L-glutamic acid inorganic acid salt respectively, or with a slurry with such crystals suspended therein, which crystals are obtained from an L-glutamic acid fermentation broth or from a protein hydrolysate and which also contain organic nitrogenous compounds other than L- glutamic acid in an ON to GN weight ratio of more than 0À05 : 1, in such proportions as to obtain a resulting mixture having an ON to GN weight ratio of more than 0À02 : 1 (where ON indicates the nitrogen content of organic nitrogenous compounds other than L-glutamic acid, and GN indicates the nitrogen content of the L-glutamic acid), adjusting the pH value of the mixture to the glutamic acid isoelectric point and recovering the resulting crystals.
