An upper sheet of dough 102 applied to intermittently advanced filled pie or tart casings is moulded thereto by a reciprocated die head 113, comprising an inner domed portion 114 surrounded by a horizontal annular ribbed portion 115, which is applied prior to and retracted after a cutter 14 provided with a knife edge 142. The cutter 14 is resiliently connected, via springs 143 and lost motion on bolts 141, to a flange of a cam reciprocated tubular member 121 within which is slidable a cam reciprocated rod 111, provided with a cylindrical head 112 to which the die head 113 is attached. The die head 113 is preferably of bronze and provides a chamber 131 adjacent the cylindrical head 112 for an electrical disc heater 13, the leads whereof pass through a tubular member 116 on which is guidingly slidable the flange of the tubular member 121. The die head 113 may alternatively be formed of soft resilient sponge material and the heater 13 may be omitted. The apparatus of the present invention may be used in conjunction with the apparatus of Specification 996,995 for producing pie cases and of Specification 881,684 for depositing the dough sheet to form the lid. The covered pies are progressed for piercing and sugar dusting.
