A method of opening up the belly cavity of fish comprises conveying the fish past tool 5 which makes a short incision in the vicinity of the anus, tool 6 which makes a cut in the vicinity of the isthmus, and tool 8 which slits open the belly cavity. The slitting tool comprises circular knife 8 which is supported in a slot in spike 9. The spike which acts as a guide for the knife 8 and engages the lower ends of the collar bones, penetrates the belly cavity of the fish through the cut made by tool 6 and passes out of the anus or the incision in the vicinity of the anus. Alternatively the fish may be conveyed tail first in which case the spike 9 enters the belly cavity via the incision in the vicinity of the anus and emerges from the belly cavity via the cut made in the vicinity of the isthmus.
